beetroot, apple & ginger juice

I like to drink juice with my breakfast or as a snack in the afternoon to give me a little lift. I love the colour of this juice brought about by the red pigment in flesh of the beet. Beetroot is high in antioxidants and iron.
makes 2 portions of juice
- 2 medium beets (scrubbed)
- 2 apples (cored)
- 4-5 medium carrots (topped and tailed)
- ΒΌ piece of lemon (rind removed)
- 1 inch piece of ginger
make and do
- - add all the ingredients to the juicer and hey presto your done
- - (the real work is in the wash up!)
with a twist
- - add a handful of the beet leafs / other greens such as kale
