beetroot, apple & ginger juice

I like to drink juice with my breakfast or as a snack in the afternoon to give me a little lift. I love the colour of this juice brought about by the red pigment in flesh of the beet. Beetroot is high in antioxidants and iron.

makes 2 portions of juice

  • 2 medium beets (scrubbed)
  • 2 apples (cored)
  • 4-5 medium carrots (topped and tailed)
  • ΒΌ piece of lemon (rind removed)
  • 1 inch piece of ginger

make and do

  • - add all the ingredients to the juicer and hey presto your done
  • - (the real work is in the wash up!)

with a twist

  • - add a handful of the beet leafs / other greens such as kale
