berry & oat smoothie

smoothies are an ideal start to the day for people who find breakfast a bit of a struggle. blueberries have one of the highest antioxidants levels of any food on the planet, have a low GI and are a good source of vitamin C - ideal to give your immune system a little boost. the avocado gives the smoothie rich creamy texture.

makes 1 smoothie (double & serve in 6 expresso cups, a breakfast shot if you will!)

  • 1 cup of blueberries
  • 1 tbsp of oats
  • ½ avocado (keep the other half to use as a spread on crackers!)
  • 1 cup of coconut milk
  • 1 tsp chia seeds
  • water / handful of ice cubes (depending if you like room temp. or chilled)

make and do

  • - blend in a powerful processor
  • - add water / ice cubes to achieve your desired consistency

with a twist

  • - blend in a medjool date for extra sweetness if you like – don’t forget to remove the pit
  • - skip adding the water or ice at final step and serve this in a bowl topped with some granola / toasted nuts / seeds for the crunch factor!
