rich in potassium and heart healthy omega 3 fatty acids this is a great ‘make ahead’ treat for the little ones! be sure to serve straight from the fridge to keep them nice and chilled.
makes 20 bites
2 bananas
100g dark chocolate
4 tbsp nut butter (I used almond butter)
2 tsp chia seeds
(+toppings of choice)
make and do
- line a small tray with baking paper
- cut the bananas into 2cm thick pieces and place on the tray
- combine the chia seeds with the nut butter (the seeds help to bind the nut butter to a thicker paste)
- add a dollop of the nut butter mixture on each banana piece
- put into the fridge for 30 minutes
- melt the dark chocolate in a bowl heated over hot water
- removed the bananas from the fridge
- using a spoon dip the banana bites into the melted chocolate to cover them and return them to the tray
- coat all the bites in chocolate and pop in the fridge to set for a further hour
- keep chilled in the fridge
with a twist
- use whatever nut butter you like and experiment with toppings, I’ve used desiccated coconut here, try crushed nuts, dried fruit for added flavour and texture
