hazelnut & cacao spread

packed with

inspired by encouraging friends and family who are parents I have decided to focus some of my foodie creations towards children. sure what could be so hard in getting kids to eat healthy food?!

I figured I’d be kind to myself and kick off this challenge with one of my favourite treats. consider this as an alternative to nutella or other chocolate spreads that, without sounding too preachy are full of refined sugar and oils.

this is gorgeous stirred into porridge, lathered onto pancakes or rice cakes. a winner for kids as it satisfies a sweet tooth.

makes 1 medium size jar

  • 200g hazelnuts
  • 1 tbsp raw cacao powder
  • 5 dates (pitted and roughly chopped)
  • 1 tbsp coconut oil

make and do

  • - roast the hazelnuts in the oven for 8-10 minutes at 180C
  • - remove and set to the side to cool fully
  • - pop the nuts into clean tea towel and rub them around to remove the skin
  • - put them into a food processor and blitz until they have broken down into a creamy hazelnut butter (takes about 5 minutes)
  • - add the dates and the cacao and blitz again until smooth and combined
  • - store in a clean jar (it keeps well, but honestly this hand around for long, word!)
  • - spoon, spread, enjoy. x

with a twist

  • - you could add a few drops of vanilla extract or liquid stevia if you like this a little sweeter
  • - cacao powder is a specialist food buy, available in health food shops - its incredibly nutritious and tastes damn good with a little sweetness added
