dark chocolate & orange mousse

this chocolate dessert is quick and easy to prepare, it just involves a little waiting time to set in the fridge. use good quality dark chocolate minimum 70% cocoa solids. dark chocolate is super rich in antioxidants. This recipe satisfies a sweet tooth without compromising on health.

makes 2 generous servings

  • 75g dark chocolate
  • 60g ground almonds
  • juice (4 tbsp) & zest of half a large orange (reserve some zest for decoration)
  • 2 large organic eggs
  • pinch of sea salt

make and do

  • - melt the chocolate in a heat proof bowl over a saucepan of simmering water on medium heat
  • - separate the eggs (whites and yolks) into two bowls
  • - combine the egg yolks, orange juice, orange zest, sea salt and ground almonds in a bowl and stir in the melted chocolate well
  • - beat egg whites until stiff
  • - fold the egg whites into the chocolate mixture with a spatula. combine thoroughly, working gently as not to knock the air out
  • - spoon the mousse mixture into two cups or glasses (I have used tea cups here)
  • - refrigerate for two hours (minimum)
  • - add some orange zest for the finishing touch when set

with a twist

  • - you could add some red chilli (deseeded and finely sliced) to this if you’re feeling brave
