almonds are an excellent source of vitamin E, an essential antioxidant that offers protection to the fats that line every cell of our body.

makes a medium size jar

  • 3 cups of raw almonds (200g)
  • generous pinch of sea salt
  • cinnamon (optional)

make and do

  • - preheat the oven to 180C
  • - add the almonds to a baking tray in a single layer and sprinkle on some sea salt and light dusting of cinnamon
  • - roast the almonds in the oven for 12-15 minutes, until lightly browned. toss half way through to ensure even toasting
  • - allow to cool for 10 minutes before placing into a food processor
  • - process for about 10-15 minutes depending on the strength of the processor, I use a magimix
  • - scrape down the side at intervals and continue to process until you have a smooth creamy butter
  • - store in airtight container or glass jar

with a twist

  • - choose your own nuts to make butter such as cashew, hazelnut, peanut or whatever takes your fancy!
