squash, sprout & quinoa salad
packed with
almost too pretty to eat ,this is a brill main course for a plant based festive meal! packed with quinoa, crunchy pomegranates & pine nuts, it covers all the bases with your complete set of essential amino acids. a crumbling of goats cheese adds a further layer of creaminess. opt to dice up the squash instead of halving it and serve as a sharing salad in the centre of the table.
makes 2 servings
- 1 small / medium butternut squash
- 8 sprouts (halved)
- ½ tbsp olive oil
- 1 tsp paprika
- sea salt & black pepper
- 2 tbsp flat leaf parsley (roughly chopped)
- seeds from half a pomegranate
- 3/4 cup of quinoa (75g)
- 1 ½ cups of cold water
- 1 tsp bouillon stock
- 2 tbsp pine nuts (toasted)
- 1 tbsp pumpkin seeds (toasted)
orange vinaigrette
- ½ fresh orange (2tbsp juice)
- 1 tbsp raw honey
- 1 tbsp apple cider vinegar
- 2 tbsp olive oil
- sea salt and black pepper

- - preheat the oven to 200C
- - half and deseed the pumpkin, and score with a sharp knife
- - drizzle with olive oil and season with paprika, salt & pepper
- - roast in the oven for 45 minutes
- - add the sprouts for the last 15 minutes (small drizzle of oil for these guys too)
prepare the dressing
- - combine the oil, honey, orange, apple cider vinegar, salt and pepper in a jar and shake to combine. set to the side
- - toast the pine nuts and pumpkin on a dry pan for 3-4 minutes. set to the side
prepare the quinoa
- - rinse the quinoa in a fine sieve until the water runs clear and transfer to a pot
- - add the water, stock powder and bring to the boil
- - reduce the heat to a simmer and cook, stirring occasionally until quinoa is soft & water is evaporated (approximately 15 minutes)
- - in a bowl stir though the cooked quinoa, parsley, pine nuts and pumpkin seeds
- - remove the squash form the oven and top with the quinoa salad
- - dress with the pomegranate seeds and drizzle the dressing all over, serve immediately
with a twist
- - serve with crumbled goats cheese if you like that sorta thing, it goes nicely
