quinoa is an amazing food, ideal for people who eat plant focused diet as it has the full spectrum of essential amino acids. quinoa is a great base for making salad. I like to make up a batch of this on Sundays and use it all week for my lunch box or dinner bowl salad. It has a very mild taste perfect for hosting herbs, dressings and all sorts of veggie toppings.

  • this is my no fail recipe: use one part quinoa to two parts water (e.g. 1 cup of quinoa with 2 cups of water)

  • - rinse the quinoa in a fine sieve until the water runs clear and transfer to a pot
  • - add the water and bring to the boil
  • - reduce the heat to simmer, cover and cook until all the water is absorbed (approx. 15 minutes). you will know the quinoa is cooked when all the grains have turned transparent and you can see the white spiral germ
