make your own ‘fakeaway’ pizza. choose wholemeal tortillas or corn tortillas if avoiding wheat or gluten. this pizza takes five minutes in the oven and is perfect Friday night food.
makes 4 pizzas
- 4 wholemeal tortilla wraps
- 4 tbsp tomato puree
- 2 large mozzarella cheese balls (I like Toonsbridge buffalo mozzarella)
- 1 large garlic clove (halved)
- sea salt and black pepper
- small bunch of fresh basil (roughly shredded)
- fresh rocket (enough to scatter a handful on each pizza)
- optional toppings:
- diced bell pepper, cherry tomatoes, mushroom, spinach, fresh chilli, olives etc.
