make your own ‘fakeaway’ pizza. choose wholemeal tortillas or corn tortillas if avoiding wheat or gluten. this pizza takes five minutes in the oven and is perfect Friday night food.

makes 4 pizzas

  • 4 wholemeal tortilla wraps
  • 4 tbsp tomato puree
  • 2 large mozzarella cheese balls (I like Toonsbridge buffalo mozzarella)
  • 1 large garlic clove (halved)
  • sea salt and black pepper
  • small bunch of fresh basil (roughly shredded)
  • fresh rocket (enough to scatter a handful on each pizza)
  • optional toppings:
  • diced bell pepper, cherry tomatoes, mushroom, spinach, fresh chilli, olives etc.

make and do

  • - preheat the oven to 220C (or as high as it will go!)
  • - rub the garlic clove over the tortillas
  • - divide the purée between the four tortillas (leave a small gap around the edges)
  • - season the purée with salt and pepper
  • - add toppings of choice, finish with cheese
  • - bake in the oven for 5 minutes or until sides are crispy and cheese is melted
  • - sprinkle with fresh basil and rocket leafs & serve immediately

with a twist

  • - experiment with herbs and vegetables; mix it up!
