this is like dessert for breakfast, somehow managing to make my mid-week breakfasts feel more indulgent than porridge! this is low maintenance and very nutritious. aim to use full fat natural yoghurt; when you see low fat products remind yourself they are frequently laden with sugar and artificial sweeteners. whole chia seeds are available in health food stores, Supervalu and in the German retailers!

it is important to drink lots of fluids with chia seeds, so keep well hydrated before and after eating (not directly). this assists chia seeds to do their job and keep everything moving.

makes 1 serving

  • 3 tbsp of chia seeds (whole not milled)
  • 100ml of milk (nut or cows)
  • 2 tbsp of natural / Greek / coconut yoghurt (+ extra for serving)
  • tsp of cinnamon

make and do

  • - place the chia seeds, yoghurt and cinnamon in a clean jar, sealable ramekin or lunch box
  • - pour in the milk and give it a good stir (until yoghurt is combined and there are no clumps of chia seeds)
  • - seal and place into the fridge overnight
  • - in the morning, top with another dollop of yoghurt and sprinkle with some chopped nuts, seeds or fresh fruit and eat immediately
