  • 2 large eggs
  • 1 large banana
  • 1 tbsp coconut / almond / cow’s milk (optional)
  • 1 tsp of coconut oil per pancake
  • handful of blueberries / raspberries / sliced kiwi or peach for serving

make and do

  • - in a food processor combine the banana and the eggs until smooth and runny (this can also be done by hand until smooth and lump free, you may need the milk to thin out the mixture slightly when working my hand)
  • - heat the coconut oil over a medium heat
  • - ladle a spoonful of the mixture into the pan
  • - cook until the pancake is set, one side is browned and edges are firm
  • - flip the pancake to cook the other side using a large spatula
  • - repeat with the remaining batter and top up the coconut oil as necessary
  • - sprinkle with chopped fruit and serve immediately
