coconut overnight oats

this is a brill breakfast to make the night before, it takes less than five minutes to prepare, pop it in the fridge and then in the morning you’re all set to go. happy days!

oats are a low glycaemic index (GI) food that provide a slow release of energy. the addition of the chia seeds which are high in both soluble and insoluble fibre further lowering the GI of the meal keeping you full all the way to lunch. chia seeds are an excellent source of Omega 3 fatty acids, protein and calcium.

makes one serving

  • ½ cup of oats (approx. 25g)
  • ½ cup of coconut milk (slightly more if you like a wetter consistency)
  • 2 tbsp of desiccated coconut
  • 1 tsp chia seeds

make and do

  • - place the oats in a sealable jar/ container
  • - add and stir through the chia seeds and desiccated coconut
  • - pour in the milk
  • - seal the lid and leave overnight in the fridge and your all set to grab and go!

with a twist

  • - add a nutty topping for extra texture, such as chopped pecans
