Its National Vegetarian Week next week from the Monday the 18th to the 24th of May. What an excellent incentive to give yourself a little challenge by tweaking your eating routine and introducing some more plants into your life.
Rather than viewing this as an incentive to stop eating meat for a week my take on this is more like a challenge to eat more vegetables. I mean I don’t think anyone, anywhere has been or ever will be in danger of eating too many vegetables?!
My motivations for eating largely a plant based diet are linked back to my health as I know they are incredibly nutritious -for me it doesn’t get more important than that. Vegetables taste amazing and they make the world a greener place to be (yikes to the greenhouse emissions generated from large scale meat production).
By embracing a few more vegetables you might by ‘accident’ experience the refreshing realisation that a dish without meat can be complete, satisfying and dare I say it better than your same old plate of spag bol! Challenge yourself this week and spend a little more time in the fresh food supermarket aisles and a little less in the fridge section.
